The Tongmun Noodle House located in Tongmun-dong No. 1, Taedonggang District, Pyongyang, is one of the best noodle eateries in Pyongyang and beyond.
The noodles served by the house are so delicious that they deserve admiration of many.
The credit goes to Kim Chun Hwa, chief of the noodle house.
With a 40-odd-year career in the catering service sector, Kim has worked as chief of the house for nearly three decades.
The noodle house opened in the late 1990s according to a state measure taken to make every city and county run a noodle house to promote the traditional food and serve it to the general public.
At that time Kim and her employees devoted their wisdom and efforts to facelift the noodle house and make noodles favoured by the people.
The taste of noodles is unthinkable apart from the meat stock.
Kim Chun Hwa was apprenticed at Okryu Restaurant, Chongnyu Restaurant and other famed catering units in Pyongyang and local areas until she developed a unique recipe for meat stock.
To better services, she encouraged her employees to offer their own ideas to improve the taste of noodles and lent an ear to customers.
Once as she read a book about cuisine, she came across information about a medicinal herb the Korean ancestors had widely used to cook noodles. Kim visited the place where the plant grows and learned the way the locals make noodles.
Such painstaking efforts bore fruit with an increasing number of regulars coming to the house.
Kim thinks the more they learn, the better they can fare. She makes sure that more employees are involved in the study-while-you-work system.
As a result, the employees improved their technical skills day by day, with the average cooks’ grade at a high level not only in the district but in the city. The house has always received diplomas at the annual national culinary skill contest.
Some of the employees have been promoted to chiefs of other eateries in the district.
Kim and her employees have rendered unstinting assistance to housing construction projects in Pyongyang and offered mobile service to the families of special-class disabled soldiers and war veterans in the district.
She is now honoured to become a meritorious person of socialist patriotism.
