Kimchi factories consolidate material, technical foundations

“In the past it was commonplace for families to make a large quantity of kimchi, regarding it as the half share of the total food. But now we don’t have to make kimchi a lot because we can buy everywhere kimchi that suits our taste,” says Hyon Myong Hui living in Songyo District, Pyongyang.

It is thanks to the mass-production of kimchi which has been pushed in the DPRK in recent years.

The Ryugyong Kimchi Factory with a large production capacity was built in a modern style in Pyongyang some years ago.

The factory is situated in the middle of vegetable greenhouses and fields stretching as far as the eye can see.

Its large buildings are furnished with production processes of full bok choy kimchi, sliced radish kimchi and soy preserved food which are automated and put on assembly lines.

It produces dozens of kinds of fresh kimchi all the year round and supplies them to Pyongyang citizens.

Its construction was followed by that of other modern kimchi production bases in all provinces across the country, including Jagang, Kangwon, South Hamgyong and Ryanggang provinces.

The kimchi factories built in all districts of Pyongyang have undergone renovation.

Their production processes are germ- and dust-free and they are equipped with such appliances as bok choy halving machine, ozone disinfector, vacuum packer, salinometer and saccharimeter.

They increase the production of different kinds of kimchi products to meet the growing demands of residents.

Especially, kimchi stands set up in different parts of the city serve as a medium for getting consumer feedback and their likings and demands are promptly reflected in production to improve the taste and quality of goods and develop new products.

“Kimchi products of the Ryugyong Kimchi Factory have so special flavour that I cannot imitate. Its kimchi, soy preserved food and fermented fish are indispensable to the diet of my family. We are a regular orderer of the factory’s products,” said Paek Son Hye living in Kyongrim-dong, Central District, Pyongyang.

Demand for the products of kimchi factories is on the rise with each passing day.
