Pyongyang, January 26 (KCNA) — Bean-curd making is a part of the DPRK’s intangible cultural heritage.
Korean people have made bean-curd and used it in diet from long ago.
In the Hamgyong provincial area there was a custom of piling blocks of bean-curd like rice cake on the wedding table, which is said to have been handed down from the period of Koguryo Kingdom (B.C. 277-A.D. 668).
The method of making bean-curd was further developed in the Koryo (918-1392) period.
Poems on bean-curd can be seen at ancient collection of works, and such fact shows that bean-curd took an important place in the diet in the Koryo period.
The experience and tradition of making bean-curd in the Koryo period were carried forward in the period of the feudal Joson dynasty (1392-1910). Various kinds of bean-curd were made at that time, being widely known to neighboring countries.
Recorded in the Chronicles of the Feudal Joson Dynasty is the fact that a king of a neighboring country repeatedly admired Korean women for making various kinds of delicious dishes quickly, saying that in particular, bean-curd is good to look and tasty and the method of making it is excellent.
In the period of the feudal Joson dynasty, there were various kinds of bean-curd such as uncurdled bean-curd and frozen bean-curd.
Among lots of bean-curd dishes handed down from long ago are uncurdled bean-curd soup, bean-curd stew, pork bean-curd broth and fried bean-curdball.
The custom of making bean-curd developed by Korean ancestors has been preserved until now.
Bean-curd making with a long history and tradition was registered as the national intangible cultural heritage in 2018.
