Rice cake is one of the distinctive traditional staple food items liked by every Korean and it is prepared by kneading grain flour and boiling it or steaming grains before pounding them.
From ancient times it has been a custom for the Koreans to make rice cake and eat it on holidays.
Particularly, they prepared various kinds of rice cakes on lunar New Year’s Day.
The white rice cake is made by kneading polished rice flour with boiling water before steaming and pounding the dough. Generally, it is not filled with stuffings nor dressed with bean flour. It is made in different shapes and classified into fancy, bar and tail-shaped rice cakes according to shape.
Solgittok or siruttok is a cake made by steaming the loosely-kneaded dough of polished rice flour in a steamer. In the Kaesong area there was a custom of sending steamed rice cake in a small steamer to in-laws.
Glutinous rice cake is made by steaming well-soaked glutinous rice in a steamer, sprinkling saline water on it and steaming it once more before pounding it in a mortar or on a flat stone. Such cakes are made with white glutinous rice, glutinous German millet, glutinous broomcorn millet and others. Koreans rate best the yellowish roasted glutinous rice cake spread with honey.
The Korean people still practise the custom of preparing and eating various kinds of rice cakes on lunar New Year’s Day.
