There is an outdoor booth at the Kwangbok Area Supermarket which is drawing many for its services of Taedonggang beer and instant foods.
An increasing number of people are visiting the booth to relish roast duck pectoral that was highly appreciated at the 13th National Culinary Skill Contest.
“The contest was divided into four events: skill, show of delicacies, demonstration and impromptu cooking. The crowd puller was the skill event,” said Kim Myong Hui in charge of the booth.
She added that the skill event brought together cooks selected from different groups, such as ministries and national agencies, the Guidance Bureau of Public Catering Service, the catering service units in provinces (municipalities) and the external service establishments.
The dish set for the group of ministries and national agencies was roast duck pectoral.
Contestants were to make the dish without a roaster. In other words, they had to cook the dish on a pan with no cooking oil, preserving the same colour, aroma and flavour as those from that cooked in a roaster.
“I have participated in several contests so far, but that was the first that I flaunted my skills before so many experts and spectators,” said Kim Myong Ae from the booth.
Kim presented a perfect dish within the set time in the event attended by over 10 cooks.
“Duck meat mostly shrinks when it is heated. So it is hard to make it mouth-watering while preserving a certain size and thickness. I wonder how she cooked it into such a big and tempting one,” said a housewife who visited the contest venue.
“It tastes good, too. It leaves neither unpleasant smell nor disagreeable taste. It is pleasantly wet and chewy,” said another housewife.
Kim Myong Ae was inundated with questions about her unique cooking method.
She lucidly explained how to slice the meat, sauce it and adjust the fire.
“I’ve learned a lot from the contest. It accords with our service whose main item is instant foods. I am going to invent more cooking methods that can be easily adopted by catering facilities and households,” said Kim.
Every day she serves dozens of dishes to customers.
