When SARS, also called an evil disease of the 21st century, swept over the world, Korean kimchi stole the limelight of the world health circle as its preventive food.
The Russian ITAR-Tass said that there are some high-grade dishes among the Korean foods and kimchi is regarded as a health food for its rich contents of vitamin.
Korean kimchi is winning popularity both at home and abroad for its unique taste and high quality. The Ryugyong Kimchi Factory is now producing various kinds of kimchi.
The factory strictly adheres to the technical requirements in order to fully ensure the taste of kimchi in all production lines, ranging from the feeding of raw materials to cabbage cutting, pickling and washing, spice adding, fermenting and maturing. It also makes a thoroughgoing inspection of the quality of products before their shipment. Over ten kinds of its products, including whole cabbage kimchi and children’s nutrient kimchi, are winning public favour for their high nutritive value and good taste.
According to its technical officer Kim Jin Hak, those foreigners who have tasted kimchi of the factory told him that they made kimchi as they had learned in the DPRK but they failed to retain its true taste, and asked him about the secret. He told them as follows: The combination of vegetables grown on crystal-clear water and soil of this land and the touch of the Koreans, in particular, are the secret of the taste of kimchi, which is one of five health foods in the world.
The whole cabbage kimchi production line of the factory was awarded the DPRK certificate of ISO 22000 food safety management system in October 2018 and the December 15 Quality Medal, a medal awarded to the best products in the country, in 2019.
