November has two seasonal sub-divisions— riptong and sosol .
Riptong implies the beginning of winter. Every year it begins on the 7th or the 8th of November. This year it falls on the 7th. Sosol , an allusion to the period that snow begins to come, begins on the 22nd or the 23rd of November. This year it falls on the 22nd.
A major Korean custom in November is to prepare kimchi. Before and after riptong the food is prepared. For this reason the month is also called the kimchi-making season.
From olden times the Korean people have attached great importance to making kimchi. The food is prepared through lactic fermentation of bok choy, radish and other vegetables, various kinds of condiments and pickled fishes. It abounds with vitamin C and minerals such as Na, K, Ca, Mg and Fe.
In particular, winter kimchi is such an essential side dish of high nutritional value for Koreans that it is called a half share of their total food for winter.
Korean women like preparing kimchi at home while teaching their children the method unique to their families. They exchange the food with neighbours, sharing mutual experience with each other.
Nowadays kimchi is prepared by an industrial method, but the local people still prefer making it with their own hands, as their ancestors did in the olden times.
