Samgyethang is a dish boiled with world-famous Kaesong Koryo insam, jujube, chestnut, gingko nut and glutinous rice in the stomach of low-fat young chicken weighing some 750g.
One of the specialties of the Kaesong area, which is home to Koryo insam, the dish can also be tasted in Pyongyang, the capital of the DPRK.
The Samgyethang Restaurant, located in Jongo-dong No. 1, Rangnang District, was opened in 2017. Visitors will be impressed with the living customs and sentiments of the Korean people before anything else.
The eatery is decked with various fixtures depicting shallow well, earthenware jar, wooden mortar and winnow that the local people had used for their dietary life for ages, straw-thatched fences, old paintings on the walls and chirping parrots in the cages. Family dining rooms are well furnished to meet their purposes.
Such an idyllic setup pleases the customers.
A regular customer called Ri Jin Hyok told that he often visits the restaurant as they serve the dish of high medicinal efficacy by following traditional cooking method and adding a variety of Koryo medicinal stuffs.
The added materials include Kalopanax pictum , root bark of Acanthopanax sessiliflorus , ear shell and matrimony vine. Those added with sea cucumbers, antler or Cordyceps sienensis are at the top of the list of demands.
Samgyethang made of silky fowl is good for preventing apoplexy and for weak and anaemic people and nursing mothers.
Samgyethang is served in bowl made of serpentine seemingly to highlight its taste and nutritive value.
Served together are traditional dishes such as mung-bean pancake, garlic pickled in vinegar, kimchi, broad bellflower root salad and insam tea.
The number of visitors is growing as the cooks try to develop the dish by carrying on the traditional cooking method and introducing scientific techniques.
