Noodles are one of the Koreans’ favourite foods.
Noodles are long, thin strips of flour-and-water dough. They are boiled and put into soup with some garnishes.
Their taste varies according to materials, cooking methods, regions, seasons and so on.
Noodles are one of the Korean staple foods together with boiled rice. Noodles are a must-eat food for wedding parties and first birthday spread.
There is a traditional custom of having “longevity noodles” for lunch on the 14th of lunar January, and it came from the desire of the people for living a life as long as a noodle strip.
An old document of Koryo, a Korean kingdom that existed between 918-1392, says that the hosts usually prepared noodles and dishes for their guests.
It indicates that the noodles were already popular in the period of Koryo and it must have been eaten from before.
The noodle strips are mostly made of buckwheat, wheat and maize powder, and they are served with cold soup, warm soup, assorted mixtures or a garnish of sliced raw fish.
The noodles garnished with sliced raw fish were particularly favoured by the people in coastal areas.
The noodles garnished with sliced raw fish in South Hamgyong Province were particularly famous.
The noodles spiced with sliced raw fish are as tasty as fish and digest well.
For the fish to be sliced, the walleye pollack is mostly used as its flesh is white and has little bones.
The cooking method of this kind of noodles has evolved for a long period of time.
It was inscribed on the national intangible cultural heritage list in August 2025.
